Rajkachori is a snack that is filled with immense tasty and yummy things and that too in crispy and crunchy layer of papdi. If I ever see a vendor selling Rajkachori chaat I truly can’t keep compose as it super tangy and yummy fillings just melt my heart away. True! Well Rajkachori is supposed to have its origin rooted back to Bikaner where is it a very popular form of snack. It is a very popular street food of Delhi and has its fan following across various states in India. So wondering if you can try your hand at home in making a super great plate of the delicious Rajkachori Chaat. Well you can absolutely. Making Rajkachori is not rocket science just follow the super easy Rajkachori recipe step by step and you are good to go. There are many variants of making Rajkachori chaat like the Rajasthan Rajkachori or the Famous Delhi Rajkachori but all the Rajkachori recipes are easy. So let’s make the super yummy and delicious Khasta kachori by following this easy Rajkachori recipe.

Super tasty and yummy: Raj Kachori chaat

Ingredients

For Raj kachoris:

  • Maida: 100gms
  • Sooji/semolina: 25gms
  • Oil: 2tbs
  • Salt: 2pinches

For Raj kachoris filling:

  • Curd: as per taste
  • Sauce: as per taste
  • Green chutney: as per taste
  • Papdi: a few
  • Sev: a handful
  • Boiled potatoes: a few diced
  • Pomegranate: a few
  • Amchur powder: as per taste
  • Red chili powder: a little
  • 10. Valle: 1-2nos
  • 11. Chole: a handful
  • 12. Boondi: a little
  • 13. Moong dal: a little boiled
  • 14. Salt: as per taste
  • 15. Roasted cumin seeds: a little crushed

Method:

Step 1: Making the batter

In a medium bowl, put maida, oil, sooji, salt and mix well. Gradually add little water and make nice dough and cover it and let it rest for a few minutes.

Step 2: Making kachoris

Now make small round balls from the dough and with a rolling pin and base, roll the balls into a thin round poori shape.

Heat up oil in a medium kadhai and when it’s hot put the kachoris in one at a time and with lightly stirring it let it fill up. On medium flame let the kachoris puff up nicely, let it be in the oil for about 5-8mins.

Now, let it rest for at least 2 hours so that it dries up and is super crispy and crunchy and filings can be done nicely.

Step 3: Making the chaat with filing up the Raj kachori

At first make a hole in the raj kachoris with hands so that fillings can be placed inside. Now put valle, papdi, saunth, curd, green chutney, salt, red chili powder, cumin seeds, amchur, potatoes, chole, Moong dal, a liitle boondi, sev, saunth, green chutney, curd and a little more of moong dal, boondi and chutney and  lastly garnish with little more spices and pomegranate and enjoy.

Serve up!

Enjoy the home made super yummy rajkachori

  1. The dough need not be very tight or very loose just the consistency required when we make pooris.
  2. Roll with a rolling pin till a thin poori shape and fry well on medium flame so it puffs up nicely from all side and looks like a balloon.
  3. It should be left to rest after fried so the oil drains off and it becomes super crispy and crunchy.
  4. You can add as much of filling as you want no restrictions on that.
