As the recipe which I am sharing for today is a gem of the monsoon food craving. Mysore bonda is a kind of snack which is puffy, tangy and yummy to have. Mysore bonda has its roots tied up in Mysore and from there it has made a special place in our hearts and a great plate of taste in the monsoon season. Mysore bonda has many names as such Manglore Bajji or Golibaje. It is basically a fried puffy dumpling which is made from different kind of flours and spices mixed with curd. It is patent Mysore breakfast recipe and a quick tea time snack as well. People love its taste and so will you. It is super easy and kind of instant to make. Super yummy and quick: MYSORE BONDA

Ingredients

  • Rice flour: 50gms
  • Maida: 150gms
  • Cumin seeds: ½ tbs
  • Salt: 1tbs
  • Baking soda: 1/4th tbs
  • Ginger: 1tbs grated
  • Green chili: 2 fine chopped
  • Curd: 100gms
  • Coriander: fresh and chopped

Method:

Step 1: Mixing the batter

  • Now first of all to make the Mysore Bonda we need to prepare the batter.
  • Take a medium size bowl and put rice flour, maida, curd, cumin seeds, salt, baking soda, grated ginger, green chilies as well and mix everything well.
  • Gradually add a little water to make a thick batter. Do not pour water at once.
  • Now add the coriander and mix well. Whisk the batter nice and smooth so the bondas are nice and puffy. The batter is ready so let it rest for 10mins with a covered lid.
  • After 10-15mins its ready just whisk it once more.

Step 2: Frying the Bondas

  • Now in a medium kadhai heat oil for frying. Put a little batter and check if the batter is all heated up or not.
  • When the oil is ready put the batter in for the Bondas and fry them till they turn golden brown and stir in between. Take then out on a tissue paper so the excess oil drains off.
  • The bondas take about 3-4mins to fry up nicely. Fry the rest of the bondas as well.
  • Serve while hot with sauce or chutney of your choice.

Note:

  • Do not pour water at once as the batter needs to be smooth and not lumpy.
  • The batter of the Mysore bonda needs to be thick and not runny so if while mixing it becomes runny add 1tbs of maida and ½ tbs of sooji to make it correct.
  • Whisk the batter nice and well so the bondas are puffy.
  • Fry the bondas till they are golden brown and take out on a tissue paper so excess oil is absorbed.
