When we hear about soup we have the image imprinted on our minds of the boring and bland tasting soups. Well the Cream of Mushroom soup is pretty different. Its amazing rich and creamy taste is something that our taste buds would just love. It is the most common kind of soup where the agent to make its texture is cream or milk rather than anything else. It is basically more related to North America where it is popularly serves as a canned soup. It is quite often used as base ingredients in many other dishes. Yummy and healthy: Cream of Mushroom Soup

Ingredients

  • Mushroom: 200gms Fine chopped
  • Fresh cream: 1 bowl
  • Onion: 1nos medium sized chopped
  • Ginger-garlic: a little
  • Lemon juice: a little
  • Butter: a little
  • Black pepper powder: ½ tbs
  • Salt: ½ tbs
  • Corn flour : 1tbs
  • Bay leaf: 2nos
  • Fresh coriander

Method:

Step 1: Frying the ingredients

In a pan melt butter and then add bay leafs, ginger-garlic and chopped onion and stir fry a little. When the onion turns a little brown add the mushroom and mix well and stir fry on medium heat. When the mushroom starts to secrete water add salt and mix and cover with lid and cook.

When the mushroom is cooked remove the bay leafs.

Step 2: Grinding the mushroom

When the mushroom is cooked take them out in a blending jar and grind into a fine paste. Do leave a little mushroom in the pan to be used later in the soup as well.

Step 3: Making the soup

Add the mushroom paste to the same pan in which we left a little mushroom and mix. Add 2 cups of water and mix. Add black pepper powder and make a paste of corn flour and a little water and add it to the mushroom mixture as well. Mix everything well and cook till it starts to thicken. Then add lemon juice and then fresh cream and mix everything well.

Garnish with a little coriander and serve well in a bowl. Enjoy!

  1. Mushroom needs to be fried on medium heat so it tastes better and the soup has a fine texture.
  2. Fresh creams make the soup taste heavenly by making it rich and healthy too.
  3. Keep the soup a little thick in consistency and enjoy it well.
  4. Do keep a little mushroom so you enjoy chunks while having the soup but you may eliminate it even.
