Dhokla is patent Indian dish belonging to the Gujarat community. It is nothing but a form of savory cake that is prepared with the fermented batter of Chickpeas and rice. At times even prepared with Bengal gram flour and semolina. Dhokla has won over hearts of many of us with great taste of it. It is protein packed and super healthy food item which is prepared with very little oil. It is a pride of Gujaratis we could say. Dhoklas serve as a great breakfast option and is very easy to prepare and is very light to the stomach but a very fulfilling meal. Often we eat this at market and wonder that it must be quite a complex dish to prepare well no. If done right you too can make super moist and soft dhoklas just like the ones in the market in a very easy way. Feeding everyone a great plate of breakfast is very important so do try this Sooji dhokla recipe at home. It is dhokla recipe with Eno and is prepared without a steamer. The Dhokla recipe we are sharing is easy and super quick. So here is a step by step Dhokla recipe. Let’s begin.

The super easy way to make Dhoklas and too perfect like the market ones

Instructions

  1. Gram flour: 200gms
  2. Semolina/sooji: 2tbs
  3. Asafetida: a pinch
  4. Salt: ½ tbs
  5. Sugar: 5tbs
  6. Turmeric: a pinch
  7. Lemon juice: 2-3tbs
  8. Eno fruit salt: 2tbs
  9. Green chili: 4-5nos(sliced in between)
  10. Fresh curry leaves: a few
  11. Fresh coriander: a little (chopped)
  12. Black mustard seeds: a little
  13. Cooking oil: a little

Method:

Step 1: Making the batter

At first in a bowl put the gram flour; add a pinch of turmeric, salt, 2tbs sugar, Semolina and 1tbs refined oil. Mix the ingredients well and gradually add water and make a thick batter and let it rest for 10-15mins.

Step 2: Prepping the stand and mould

Turn on the gas and put on the kadhai. Pour 2glass of water and place the stand in it and let it boil. Until then with a brush and a little oil grease the plate.

Step 3: Adding Eno to the batter

When the water in the kadhai starts to boil at that time add 2tbs of Eno fruit salt and a little water to the gram flour batter and mix so that the batter becomes puffy.

Step 4: Making the Dhoklas

Pour the batter into the greased plate and tap so that the layer is even. Place the plate into the kadhai and cover with a lid and cook for 20 mins.

Step 5: Making the tadka shikinji

In a pan pour a little oil and heat up. Add the mustard seeds and let it crackle and then add asafetida and mix. Add the sliced green chilies and fresh curry leaves and fry a little. The tadka is ready. Add 2 cups of water in it and add 3tbs of sugar and let it warm up on low flame just to make the sugar melt and then turn the flame off. Add 2tbs of lemon juice at last and mix.

In the meanwhile let’s check on the Dhoklas. Take a knife and dig if it comes out clean then the Dhokla is ready. Let it rest and cool down.

Step 6: Serving the Dhokla

Now, de-mould the dhokla by carefully running the knife along the edges. And put a plate on top of the mould and tap it out on the plate. Cut into pieces of your choice. Now pour the shikinji that we made on it.

And put fresh coriander and grated coconut and serve well with red chutney or green chutney and enjoy.

Notes:

  1. The dhokla batter needs to be of the right consistency. Not too thick neither runny.
  2. While making the tadka shikinji make sure to only boil the water and sugar to make a shikinji not sugar syrup. The right amount matters a lot as the softness of the dhokla depends totally on it.
  3. While de moulding the dhokla, always keep the portion with web o top so it soaks the tadka shikinji well.
  4. Cut in to pieces of your preferred size and enjoy with yummy chutneys.
