Whenever we step out of the house, if there is some shop selling Hot and fluffy pooris with that amazing Aloo ki sabzi one cannot simply resist. The taste of that blend of simple spices in that yum Aloo Ki Sabzi gravy is a taste everyone simply loves. If we talk about its origin it is a true Desi dish and is liked in most households as an ideal breakfast. Wondering how to cook this super Aloo ki sabzi dry or gravy style don’t worry its super easy to make. So let’s get started.

DELICIOUS AND FINGER-LICKING ALOO SABZI JUST LIKE THE MARKET’S HALWAI!

Ingredients

  • Potato: 6Pcs Boiled and peeled
  • Coriander powder: 1tbs
  • Red chili powder: 1tbs
  • Turmeric powder: 1tbs
  • Garam masala: 1/2tbs
  • Cumin seeds: 1tbs
  • Coriander seeds: 1tbs crushed
  • Hing: 1pinch asafetida
  • Mustard oil: 100gms
  • Tomato: 5pcs pureed with green chili
  • Green chili: 1pc
  • Onion: 1pc fine chopped
  • Fresh Coriander: 1bowl fine chopped

Method:

Step 1

In a medium kadhai, pour mustard oil and heat. Add crushed coriander, cumin seeds and fry. Add chopped onion, turmeric and sautéed it and cook for 15-20 secs. Add tomato puree and fry. Now add coriander powder, red chili powder, garam masala, salt. Stir well and fry well. Add fresh coriander and mix well.

Step 2

Add the boiled potatoes and mash them down. Mix it well with the spices and cook for 1-2mins.

Add about 1-1.5 glass of water and let it simmer. Cook well and cover it with a lid and let it cook for 5mins. (You can keep the Aloo sabzi dry and take it on while travelling or packaging into kids lunch boxes)

Step 3

Let the sabzi have a little gravy you can make a dry variant as well if you like and turn off the gas.

Step 4

Serve it hot, garnish it with fresh coriander. You can enjoy the taste of this spicy Aloo Sabzi with Pooris or Parathas, anything you like. Enjoy it over breakfast.

Notes:

  1. Do not over boil the Potatoes.
  2. Make puree of tomato with green chili.
  3. When the spices start to ooze out oil, add the potatoes.
  4. You can make the dry Aloo sabzi or a gravy one, Just alter the quantity of water as per your taste.
